Better news: you don’t have to give up your favourite recipes in order to follow a vegetarian diet. You can make almost anything you used to eat with plant-based ingredients; this includes even highly meat-based dishes like Buffalo wings, meatballs, and burgers. Mushrooms
Mushrooms are the way to go if you want that umami, or meaty, taste. Rich, meaty, and earthy, their flavour is particularly pronounced in cremini or portobello mushrooms. They can take the place of meat in any recipe because they’re filling and healthful. Sauteing mushrooms in vegan butter with balsamic vinegar, black pepper, and thyme is my favourite way to eat mushrooms. Unless I’m packing them onto a crispy roll to create a French dip sandwich, I then serve them over polenta. Try the mushrooms in this vegan “lamb” burger or in this Mushroom Stroganoff. Serve Portobello Wellington and Stuffed Mushrooms with Pecans to your dinner guests to wow them.
jackfruit
You should get some jackfruit if you haven’t already tried it. Although jackfruit is a fruit in theory, it can remarkably replace meat in savoury recipes. It comes in a can either raw or already chopped. The flavour of jackfruit is very slightly sweet, but not so much that it can’t be used to make a rich, filling Philly Cheesesteak. Jackfruit is ideal for stir-fries, bbq sandwiches, and other recipes calling for pork, chicken, or beef.
Eggplant
Eggplant is probably the first vegetable that comes to mind when someone goes vegan, but it’s capable of so much more than just making parmigiana. Rich and meaty in flavour, aubergine is incredibly adaptable. Try these Eggplant Burgers if you don’t think eggplant is for you; you might be surprised. Spiralized eggplant noodles, crispy eggplant fries with marinara dipping sauce and vegan mozzarella-stuffed eggplant meatballs are some more delectable eggplant recipes.

legumes
Legumes and beans are wonderful. There are a plethora of options available to choose from, including black beans, kidney beans, pinto beans, aduki beans, chickpeas, and black-eyed peas. They are also reasonably priced, nutritious, and filling. Hearty soups, stews, and chillis are made with beans. What about a Tamale-Inspired Bowl with Beans or White Bean and Kale Soup? To make delicious Hoisin Black Bean Burgers, Black-Eyed Pea Italian Sausages, or Chickpea “Tuna” Salad, substitute beans and legumes for the meat.
